Stonefruit Feta Salad w/Vinaigrette Dressing

I was visiting my son in North Carolina the past week and he had his close friends come to visit us for the weekend.  A young lady by the name of Emily, tasted items from InfuseMe and could not wait to cook for us.  What she made for us was hands down the best I have ever had and wish she could have stayed longer to show me more things she had going through her mind.

I am providing the recipe she gave to me so that everyone can give this a try.

Stonefruit Feta Salad:

Stonefruit:  3-4 Peaches, Plums, Nectarines (this is what she used for the night).  (She also stated, tangerines or any other citrus fruits would work well.)

Add slices raw or lightly sauteed in extra virgin olive oil and a Tbsp. of InfuseMe Black Mission Fig Balsamic Vinegar.

Almonds Slivered:  Slowly pan roast almonds on Medium-Low heat until golden.  (Stovetop w/Butter & InfuseMe Extra Virgin Olive Oil of choice)

Feta:  Mix into salad last

 

Stonefruit Feta Salad Vinaigrette Dressing:

1/2 Cup InfuseMe Honey Ginger White Balsamic Vinegar

1/4 Cup InfuseMe Extra Virgin Olive Oil (your choice, she used the CA Organic Arbequina)

2 1/2 Tbsp InfuseMe Cranberry Pear White Balsamic Vinegar

1 Tbsp Dijon Mustard

1 tsp. ground black pepper

Mix well and toss into salad! 

 All I can say is YUMMY!
