suggestions: Great as a side to all meats, chicken, fish and shellfish. Add olive oil for a creamy non-dairy salad dressing. Mix into pasta or risotto. Use as a healthy sandwich spread or dip. Eat straight out of the jar!

Ingredients
  1. 1 pound fresh green beans, halved crosswise and blanced (or frozen, thawed)
  2. 1 cup drained & rinsed canned kidney beans
  3. 1 cup drained & rinsed canned black beans
  4. 1 cup drained & rinsed canned garbanzo beans
  5. 1/2 cup chopped red onion
  6. 1/2 cup The Gracious Gourmet Garden Tomato Pesto
  7. 3 tablespoons red wine vinegar
  8. 2 tablespoons extra virgin olive oil
  9. Salt and freshly ground black pepper
  10. 2 tablespoons chopped fresh basil
Instructions
  1. Combine beans and red onion in large serving bowl. Whisk together Garden Tomato Pesto and vinegar in small bowl; toss with beans. Season generously with salt and pepper. Cover and chill several hours or overnight. Toss with basil and serve.

Ingredients
  1. 2 burrito sized flour tortillas (10-inch)
  2. 1/4 cup The Gracious Gourmet Garden Tomato Pesto
  3. 1/2 cup chopped roasted red bell peppers
  4. 1/4 cup coarsely chopped fresh basil
  5. 1/2 cup shredded smoked Mozzarella cheese
Instructions
  1. Spread each burrito with 2 tablespoons Garden Tomato Pesto. Sprinkle each with red bell peppers, basil and cheese. Roll up; cut in half.

  2. 2 tablespoons balsamic vinegar
  3. Salt and freshly ground black pepper

Instructions
  1. Whisk together Garden Tomato Pesto and balsamic vinegar. Season to taste with salt and pepper. Toss gently with greens.
